It was cultivated by the Mayas in Central America as early as 600 AD, but the Swiss really perfected the art of chocolate making.
Chocolate was originally consumed in a liquid form, but the solid form of the favorite treat gained popularity in the 19th century.

In 1819, one of the first chocolate production facilities was opened in Switzerland by François-Louis Cailler.
Today the brand is known as Nestle.
This facility is still open today, which makes it the oldest brand of Swiss Chocolate.
Toblerone is also a popular brand of chocolate from Switzerland.
The company was formed in 1867, when Jean Tobler opened his factory in Switzerland.
Other chocolate producing pioneers soon followed to help establish Switzerland as a chocolate lover’s haven.

There were a lot of chocolate innovations to happen in Switzerland.
Milk chocolate was introduced by Daniel Peter in 1875 in Vevey, Switzerland.
Rodolphe Lindt developed the “conching” process in his factory located in the city of Berne to create the world’s first melting chocolate.
The “conching” process allowed for chocolate manufactures to add nuts and other favorite ingredients to this delectable treat.

In the early 1900s, Swiss chocolate became known for its quality throughout the world.
Almost three quarters of Swiss chocolate produced during this time was exported.
During the world wars and economic crises of the 20s and 30s, chocolate production declined.
However, since 1950 Swiss chocolate sales have increased annually.
More than 50 percent of the country’s chocolate is consumed domestically.
Switzerland has the highest per capita annual rate of chocolate consumed worldwide, which equates to about 24 pounds of chocolate consumed by each person per year.

Chocolate production has come a long way.
Technology has been developed so that consistent and high quality chocolate products are produced.
Cocoa beans are the most important ingredient in the chocolate production process.
The beans are checked for quality before they are crushed and roasted.
Next, the roasted beans are ground up to make a cocoa paste.
The paste is mixed with sugar and cocoa butter to make traditional dark chocolate.
Powdered or condensed milk can be added to make milk chocolate.
Cocoa butter and sugar are mixed to make white chocolate, while the cocoa paste is excluded.

You can tell you are eating a quality piece of chocolate when you break off a piece of the delicious treat and the break is crisp and the chocolate does not crumble.
Chocolate connoisseurs also know that chocolate melts in your mouth and does not leave an aftertaste.

The governing association of Swiss chocolate was founded in 1901 and is named CHOCOSUISSE, the Association of Swiss Chocolate Manufacturers.
The organization is comprised of 18 Swiss companies that manufacture chocolate and chocolate products.
CHOCOSUISSE manages the interests of the Swiss chocolate industry with all of its stakeholders, which can include trade unions, the public and leading business organizations.
Swiss chocolate manufacturers are very careful to only produce the highest quality products, which is why the organization was formed.
